I am building a new ht that is 14' x 24' and will have all of the correct sound treatments like bass traps, first reflecton point eliminations, etc. It will also have an AT screen with the lcr behind it. My question is, I have ordered all 340 SEs with the mkii sub. I see that most folks are using smaller speakers for the surrounds. Do I have too much speaker coming for the surrounds? Am I better off going with smaller surrounds for quality purposes? The $$s are not an issue for me.

If the cash isn't an issue, and you have room in your theater for 4 large surround speakers, then go for it. Most of the time, people want smaller surrounds so they can be hidden inside a false column or mounted on the wall. If this isn't an issue, then 7 340's would make for an extremely dynamic theater when crossed over at 80Hz.
